Using your rub while cooking near steam and heat will cause clumping, dry out flavors and could lead to molding.

Freeze carefully
While it’s always best to try and buy your rubs based on a reasonable use window, sometimes you can find great deals on larger quantities. If you do need to store a bulk buy, use several smaller containers and defrost only what you need. Defrosting and freezing repeatedly could cause excess moisture to clump and ruin your rub.
