Smoked Tri-tip Beer Chili from scratch
How to make Smoked Tri-tip Beer Chili from scratch:
This recipe will show you how to make a delicious Tri-tip chili from scratch but allow you to personalize it with your own favorite Beer and Rub to truly make it your own!
Serves: 6-8
Prep Time: 30 minutes
Cook Time: 4 hours
Ingredients:
1 - 3.5lb Tri-Tip Seasoned however you like it - I prefer Santa Maria style
1 - Red Bellpepper - Chopped
1 - White Onion - Chopped
3 - Jalapenos - Chopped
2 - Limes - Squeezed for their juices
1 - 12oz. Beer of your choice - I like Reds or Ambers
2 Tbsp Minced Garlic
2 Tbsp Chili Powder
1 Tbsp Paprika
1 Tbsp Cumin
2 tsp Oregano
2 tsp Salt
1 tsp Pepper
1/2 tsp Cayenne Pepper
2 - 14oz Cans of Black Beans(drained)
1 - 14oz Can of Chili Beans(drained)
5 cups Beef Broth
*** 2 Tbsp of Your choice of an additional Rub spice***
(I used Go Big or Go BBQ for this chili!)

Instructions:
- Smoke your Tri-tip at 250deg until it reaches an internal temp of 130deg. Typically takes 1 1/2 hrs for 3.5lbs
- Prepare your ingredients; Chop the Onion, Bellpepper, and Jalapenos, Measure out your spices and prepare your taste buds
- When the tri-tip is done cut it into thick 1" cubes and set it aside, set smoker to 225deg for later
- On the stovetop put some oil in a large Pot(8 Quarts+) with the chopped Onions and cook on Medium for 5 minutes
- Mix in Bellpepper and Jalapenos and cook for 5 more minutes
- Mix in the Tri-tip and stir
- Mix in all your Spices and stir
- Slowly pour in your Beer of choice and squeeze in the lime juices and stir
- Mix in the Diced Tomatoes and Beans
- Add the Beef Broth and stir for 2 minutes on Medium Heat
- Transfer to a large Aluminum Pan and place in smoker at 225 deg for 2 Hours
- Let set and cool for 10 minutes then serve in bowls with your favorite toppings; Cheese, Cilantro, Sour Cream, Avacado, etc....
